Generally, it takes 100 to 120 days for peppers to mature from seed; 70 to 85 days to mature from transplants.

Peppers might be harvested from July through October. Your maturity time depends upon when you planted and whether you planted from seeds or transplants. Just look on your seed packet if you still have it, or let me know the variety and I'll look up for you the days to maturity. Most peppers, just leave them on the plant to ripen to your desired state.
